Menu Monday!

ListCloseUp Happy Monday! Weekend recap! If you follow me on Instagram OR read last week’s It’s Friday post, you’ll know I was on vacation last week.  Yippee!  We spontaneously decided to head to the NC mountains, and it was such a great trip.  We stayed in downtown Asheville, which meant easy walking to good eats.  We also day-tripped to Greenville, SC.  Greenville – you were a wonderful surprise!  The downtown reminds me of Durham-in-the-Future, and it has an awesome downtown river and park.  Such a delightful visit. Anyway, we’re back to regular  life.  Boo. Monday (Cinco de Mayo): Tex Mex Black Bean Quinoa Casserole (From iFoodReal.com)

Tuesday: Creamy Tomato Basil Pasta with Wilted Spinich

Wednesday: Easy Chana Masala (From CookieandKate.com)

Thursday: Mac & Cheese Spaghetti Squash Bake (Adapted from Pinterest)

Friday: Caprese Paninis

Saturday: Kale, Black Bean & Avocado Burrito Bowl (From CookieandKate.com – I’m officially obsessed with her blog!)

Sunday: Mother’s Day – so I’m not cooking.

*Grocery stores this week: Trader Joe’s

  1. Amazing Dinner menu! I was hungry just looking at it and I already ate breakfast! 🙂 This is such a great idea to menu plan. I have a plan in the works, I just need to get it to be routine. I am going to check out some of the recipes you posted. YUM!
