Menu Monday!

Hope you had a fabulous Independence Day weekend!

We had a pretty quiet weekend ourselves, which was wonderful!  On the 4th we had our burgers, potato salad AND an apple pie (which I polished off for breakfast this morning).  And then we all went to bed early!

On Saturday, we actually all got to go to church together!  Then we had a genius (sarcasm) idea to go on a hike at Occoneechee mountain.  When we started out, husband said “I don’t remember why you didn’t like this hike, Katie?”.  Well, it took us about 15 minutes of walking in 85 degree weather, carrying a small child, to remember why.  You’re climbing….. a mountain.  We were shattered.  So we consoled ourselves by picking up burritos on the way home.

Anyway, enough about that.  On to the menu!  This week we’re headed up to visit my in-laws in Virginia Beach for a long weekend, so we’re focusing this week on clearing out our fridge!  In fact, my shopping list says: Black Beans, Jar Roasted Red Peppers, Milk.  Ha!

If this is your first time visiting for Menu Monday, then welcome!  This is where I share my weekly dinner menu, along with recipes.  We are a vegetarian family, so if you are also meatless, or looking for ideas for a Meatless Monday, then you’re at the right place! 1. We’re planning Wednesday tacos around here this week too! So easy and good. I’m working on getting back to better meal planning after several weeks of being in & out with travel and with birthdays and other events that we did a lot of eating out for… So I’ll be coming back for more ideas to copy 🙂 This burrito bowl is sounding pretty good!

    • Copy away, by all means!! I do the same thing 🙂 Tacos are so easy, aren’t they? I could eat them every day. And that burrito bowl is so yummy!! It could even be vegan if you didn’t add cheese (but I need cheese… )

  2. You have me trained Katie! As soon as I read the title, “Menu Monday” my mouth begins to water! 🙂 Great job!

  3. Meal planning has always occupied a significant chunk of my daily chores. Thanks for letting me know about your page. I have a new batch of recipes to try! 🙂

I want to hear from you! What have you got to say?
