Menu Monday #31

Another weekend bites the dust! I’m still weeping a little that December is just flying by. October – December is my favorite time of year. It’s my reward for surviving the southern summers. But it’s going too fast!

Anyway, for this week’s menu, I’m still leaning towards easy, quick meals. We also have a goal of not going out to eat for the rest of this month. Christmas expenses pile up, you know.

We have several Christmas schindigs this weekend, so that’s a few less meals to plan/cook. You’ll see pancakes on the menu again – I’m obsessed with this breakfast for dinner concept!! And those pumpkin pancakes I linked are amazing! (Whitney at Come Home for Comfort has a winning recipe)

Trader Joe’s Pizzas

Tuesday:
Kale, Black Bean and Avocado Burrito Bowl
(An old standard)

Wednesday:
Trader Joe’s Indian curry of some sort….
and their garlic naan – yum!

Thursday:
Breakfast for Dinner – Pumpkin Pancakes

Friday (Soup Night):
Vegetarian Chili
(Trying out a new recipe for this one)

Saturday:
Mexican Baked Polenta with Salsa Beans and Sauteed Veggies

Sunday:
Christmas Party – no need to cook!

Menu Monday #30

Happy December and welcome back to the blog-ola! I hope you had a wonderful Thanksgiving! I enjoyed it. We went up to my in-laws, and then was home Saturday and Sunday. In fact, Sunday felt like Monday… I’m a little thrown off!

This week’s menu has a lot of easy meals. I know this month will be absolutely jammed packed getting ready for Christmas. So I need to take at least one thing off my list, and easy, fast meals are one of those things!

Tortilla & Black Bean Pie

Wednesday:
Trader Joe’s Yellow Curry

Thursday:
Breakfast for Dinner – Pumpkin Pancakes
(
We’ve had chocolate pumpkin pancakes, but they are decadent!
This time we’re going to try this recipe from Come Home for Comfort!)

Friday (Soup Night):
Mushroom Bourguignon
(My mom’s concoction, but this recipe is similar)

Saturday:
Spaghetti with Tomato Basil Sauce

Sunday:
Tacos

Menu Monday! #28

Happy Monday! Hope you had a fabulous weekend relaxing and enjoyed the time. We had a nice, quiet weekend. Didn’t really do anything. Which, won’t lie, is kind of nice.

This week’s menu is quite minimal. Elizabeth and I will be solo this week. Hubby is gone at a conference. So we’ll just be eating through our stash of food. 🙂 A mom’s dream!!

But, I have been craving a really yummy veggie chicken noodle soup. I’ve been looking for recipes and think I might use this one, but swap out the homemade stock and chicken bits for no-chicken chicken stock.

Anywho, so no menu this week! We’re just eating random things 🙂 Yay!

Menu Monday #28

Happy Monday!

Our weekend went from being super busy with tons of activity to all the activity being canceled. That ended up being a good thing for us, since Elizabeth AND I ended up with colds. But we tried to go out and do a few activities all together. It was nice Fall weather this weekend and we wanted to take advantage of it. More on Friday for Hey Hey, It’s Friday!

You may recall that last week I mentioned I was going to try one of Oh My Veggie’s recent vegetarian menus. It’s a genius idea – basically a week of menus with links to recipes, and THEN a printable grocery shopping list. Handy! But tactical error – the menu I chose was several sweet potato recipes. And the hubby, apparently, doesn’t like sweet potato. He suffered.

So it’s back to the same ol’ same ol’ this week. 🙂

Basic Spaghetti, Garlic Bread & Roasted Brussel Sprouts

Wednesday (Breakfast for Dinner!)
Pumpkin Pancakes, Fruit, Veggie Sausage

Chili (may use this recipe but not make it vegan) with Corn Bread

Black Bean & Butternut Squash Enchiladas

Sunday
Mini Thanksgiving using some of these recipes
But also plan on making my vegetarian meatballs
