Happy Monday!

Our weekend went from being super busy with tons of activity to all the activity being canceled. That ended up being a good thing for us, since Elizabeth AND I ended up with colds. But we tried to go out and do a few activities all together. It was nice Fall weather this weekend and we wanted to take advantage of it. More on Friday for Hey Hey, It’s Friday!

You may recall that last week I mentioned I was going to try one of Oh My Veggie’s recent vegetarian menus. It’s a genius idea – basically a week of menus with links to recipes, and THEN a printable grocery shopping list. Handy! But tactical error – the menu I chose was several sweet potato recipes. And the hubby, apparently, doesn’t like sweet potato. He suffered.

So it’s back to the same ol’ same ol’ this week. 🙂

Basic Spaghetti, Garlic Bread & Roasted Brussel Sprouts

Wednesday (Breakfast for Dinner!)
Pumpkin Pancakes, Fruit, Veggie Sausage

Thursday
DIY Chipotle Burrito Bowls

Friday (Soup Night)
Chili (may use this recipe but not make it vegan) with Corn Bread

Saturday
Black Bean & Butternut Squash Enchiladas

Sunday
Mini Thanksgiving using some of these recipes
But also plan on making my vegetarian meatballs

Happy Monday!  Hope you had a nice weekend!  We enjoyed rainy, drizzly weather here in Durham, and it was so nice!

But, our sweet little girl is teething, and she seemed to be in a more sour spirit this weekend.  Oh well.  It will end soon… until the next tooth.

Yay!  Back on track with another Menu Monday!  I sure hope you enjoyed the last two weeks’ posts about easy make ahead meals and my favorite desserts found on Pinterest!  But it feels good to get back into the swing of things.

This week we’re hosting two different group for meals, so the menu may look a bit more glamorous than it normally does.  There are a lot of new recipes on the menu this week!  I’ve marked all the new ones with a *.

Wednesday:
Buffalo Wing Salad
My own creation, but this is pretty close!  I sub in Morningstar Farms Buffalo Wings

Thursday:
Hosting our Play Group for Lunch
Baby Spinach Frittata with Sweet Potato Hash*
We’ll eat leftovers for dinner

Friday:
Tacos

Saturday:
Lebanese Lemon-Parsley Bean Salad* with Hummus and Pita

Sunday:
Tex Mex Omelets with Roasted Cherry Tomato Salsa*

Menu Monday!

Happy Monday!  We had a fabulous, but tiring weekend. Hope yours was a great one as well!

This is going to be a shortened menu this week.  I’m leaving out of town on Wednesday, so I’ll just be jotting down a few things I’m making ahead for my husband, so he doesn’t starve 🙂  It’s a lot of Mexican items…. just realized.  But it’s his favorite genre.  He’ll balance it out by going out to eat, I’m sure.

Menu Monday!

Hope you had a fabulous Independence Day weekend!

We had a pretty quiet weekend ourselves, which was wonderful!  On the 4th we had our burgers, potato salad AND an apple pie (which I polished off for breakfast this morning).  And then we all went to bed early!

On Saturday, we actually all got to go to church together!  Then we had a genius (sarcasm) idea to go on a hike at Occoneechee mountain.  When we started out, husband said “I don’t remember why you didn’t like this hike, Katie?”.  Well, it took us about 15 minutes of walking in 85 degree weather, carrying a small child, to remember why.  You’re climbing….. a mountain.  We were shattered.  So we consoled ourselves by picking up burritos on the way home.

Anyway, enough about that.  On to the menu!  This week we’re headed up to visit my in-laws in Virginia Beach for a long weekend, so we’re focusing this week on clearing out our fridge!  In fact, my shopping list says: Black Beans, Jar Roasted Red Peppers, Milk.  Ha!
